Edition Coffee Roasters by brothers Dan (ex-Room 10) and Corie (returning from Japan to open Edition) is a fresh Japanese-Nordic styled addition to Sydney’s cafe scene. Roasting all the coffee for the operation in house, there is filter, espresso and cold drip brews to complement the fusion cooking. The Japanese and Swedish chefs have combined their talents to create an unusual menu including Swedish Smørrebrød with king salmon, gräddfil, pickles and roe, a black rice dish with coconut yoghurt, seasonal fruit, grains and seeds or a coffee braised venison roll with Japanese coleslaw and wasabi Mayo.
The Japanese-Nordic feel extends to the space with natural wood chairs imported from Japan, handmade brass lights from New York and an oak Japanese shoji screen soon to be installed based on one of Corie’s favourite tea house’s in Japan, Baishinka. The restored Parker chairs are comfortable and you can find you’ve been sitting for way longer than you expected to. Edition Coffee Roasters have created a space that feels like a pool of solitude on Liverpool Street. Well worth a visit.
