Madeleine’s are a buttery French sponge cakes traditionally baked in scallop-shaped Madeleine moulds. They’re made with sugar, flour, melted butter and eggs, often flavoured with lemon or almonds.
Bake a batch of these for breakfast to drink with a cup of coffee or better still, hot chocolate. Try this recipe courtesy of the BBC website, it is far easier than I (i.e. my wife…) thought, and eat them while they are hot, dipped in the hot chocolate for full effect!
