Bill Granger’s third Sydney cafe has opened in Bondi adding to a growing international business with cafes in London, Tokyo, Honolulu and Seoul. If you have been to Bills before, you know what to expect; a well conceived, casual operation featuring natural materials, comfortable furniture and a floor staff that know their business. All the favourites are on offer including ricotta hotcakes with banana and honeycomb butter, sweetcorn fritters with spinach and bacon and his famous scrambled eggs.
The coffee at Bills Bondi has been taken up a level with beans supplied by specialty coffee house Single Origin Roasters. Filter and cold drip have been added to the usual options from the espresso machine. Bills continues to deliver the best ricotta hotcakes around and his impact on the Sydney dining scene cannot be overstated.
